Homestyle Curry Recipe

yummy yummy. Making bento's are encouraging me to be creative & explore foods again. Also, back to being a SAHM gives me the time to enjoy cooking again. Soooo, I checked out this cookbook, 50 Great Curries of India, from the library, but as usual had to go & mees w/ it. Can't leave it alone. So here's what I ended up with.

Homestyle Curry

4 Tbsp veg. oil
1 large onion, chopped
2 cloves garlic, minced
1/4 inch piece of fresh ginger, grated on smallest holes or rasp
3/4 tsp ground coriander
a dash of tumeric
1/4 tsp ground cumin
1/2 tsp garam masala
1 tsp paprika
1 reg. sized can stewed tomatoes
1 chopped tomato (was starting to get funky.)
salt
1/4 tsp curry powder
1/2 breast & 1 thigh choppped cooked chicken
1/2 a bag red lentils that have been cooked til tender

rice: cook according to pkg directions

Heat oil in frying pan. Add the onion & saute over med. heat for about 20 - 25 min. or deep brown. Add the garlic & ginger & fry aother min. Add the coriander & stir for another min. Then add the rest of the seasonings. Add all tomatoes & 1 cup of water. Stir in chicken & lentils. If looks dryish add more water. Simmer about 10 - 15min. & salt to taste. Serve over rice. yum yum yum. Even picky Ivy liked it.
