petersiliewurzel

Tee-hee. That name just tickles me. I love Parsnips & LOVE the German name for them. I love when the temp starts to drop - nummy nummy food time. Today it was roasted root veggies. Oh lovely.

Cut up parsnips, carrots, potatoes, onions & what ever else you want/have on hand. Toss w/ a bit of olive oil, salt & pepper. Cover w/ foil, bake at 350 til fork tender.

Next time I will add sweet potatoes. Parsnips taste like carrots, but BETTER. At least when roasted - have never eaten them any other way. I could leave out the carrots as they are a bit redundant, but I always have many hungry peeps in my house & more food is better. If you haven't before, try some for yourself & ENJOY!
