Guacamole +

Okey dokey. Last year my wonderful hubby bought me a Vitamix. Mostly I use it for smoothies & frozen drinks (frappacinos, icees...) when it is hot, & periodically, soup. But the thing I am most proud of is my guacamole, even if it's not the thing I make the most. pretty much what I did was take basic guacamole & add a BUNCH of spinach to it. But man-o-man what a difference that makes. It really doesn't affect the taste much. At least not that we can tell. adds maybe a bit of a vegetal taste, but as we have spinach daily in our smoothies, really don't notice. Now, I use my Vitamix, which if you've ever seen a demo, you know is a kick-butt mixer, but if you don't have one, perhaps a regular blender would do. or a food processor. I cook very much by ear & add a bit of this a pinch of that & whatever I have on hand, but will attempt to do my best to describe what all goes in, it is up to you & your tastes as to how you stick to it.

Heather's Guacamole +
Cayenne Pepper

Prep your ingredients. Peel, chop, dice, wash… 
the ingredients
Add all except the tomato & 1/2 - 2/3 of the onion (1/3 - 1/2 goes into the blender.)

Now blend the heck out of it. Keep pushing it down.

tamp it down
tamp! tamp! tamp!

Once it is well blended, give it a taste. Does it need more seasoning? More lime? In this batch I had gotten carried away with the lime, so added another avocado & more seasoning to balance it all out.

Now mix in those beautiful diced onions & chopped tomatoes.

(forgot about it for a few days.)

At 6 days it still looks good, & tastes ok. I think probably 5 days is most. At 6 there was nothing wrong, still edible, but the lime has gotten a bit to strong by now, but day 3 tastes just as good as day 1. 
So go on, give it a try. Add spinach to your guac, you won't regret it.
